The Ultimate Smoked Roast Beef

3 lbs round roast 1 tbsp salt 1 tsp black pepper 2 tbsp dijon mustard 4 cloves garlic  2 tbsp fresh rosemary 4 tbsp butter

Ingredients

Prepare your smoker for indirect heat.

1. Prep the Smoker!

Sprinkle beef with salt and rub with mustard, rosemary, and minced garlic.

2. Season the Beef!

Add the wood chunks to the smoker and cook beef on the cooler side.

3. Smoke the Beef!

Sear beef in a hot cast iron skillet to form a crust on all sides.

4. Sear the Beef!

Allow beef to rest for at least 10 minutes before cutting a serving!

5. Allow beef to Rest!

Serve smoked roast beef with a side of homemade horseradish sauce!
