  • Broccoli Florets
  • Red Bell Peppers

  • Olive Oil – or your favorite cooking oil (we use avocado oil)
  • Vegetable Seasoning -Here’s where you can adapt the recipe for whatever you’re serving. Use ranch seasoning, Italian seasoning, Lemon Pepper, Greek, or even a classic BBQ spice blend, depending on the flavors you want.
  • Kosher Salt and Freshly Ground Black Pepper

Or use whatever veggies you have on hand. We use everything from baby broccoli to beets.

This easy air fryer vegetables recipe makes a variety of veggies perfectly crispy and sweet by maximizing flavor without added oil. By air frying, the high heat caramelizes the natural sugars in the vegetables, crisping them up outside while keeping them tender inside. The perfect quick and easy side dish for busy weeknights.

Ingredients  

  • 3 large carrots peeled and cut into large chunks
  • 13 ounces broccoli florets
  • 1-2 red bell peppers cut into large cubes
  • 1 Red onion cut into 8 pieces
  • 1 tbsp olive oil
  • 2 tsp vegetable seasoning or ranch seasoning, Italian seasoning, Lemon Pepper, Greek, or even a classic BBQ spice blend
  • Salt and pepper too taste

Instructions 

  • Cut all the vegetables into even sizes and set aside.
  • Preheat your air fryer to 350 – 375 degrees F
  • Add the olive oil, vegetable seasoning, salt and pepper to a mixing bowl and whisk to combine.
  • Add the cut vegetables to the mixing bowl and stir to combine and coat all the vegetables.
  • Transfer the vegetables to the air fryer basket, making sure not to overcrowd the basket.
  • Air fry for 15 to 20 minutes. Depending on your air fryer model, you may need to shake the basket once while cooking to get everything evenly brown.
  • When caramelized to your likeing, carefully transfer the veggies from the air fryer to a serving dish.
  • Serve with on its own or with your favorite main dish.

WHAT TYPE OF VEGETABLES CAN I USE BESIDES THE ONES LISTED?

Feel free to use root vegetables or your favorite vegetable medley. Some great options are Brussels sprouts, green beans, potatoes, parsnips, fennel, or any other types of veggies you want!

Can I use frozen veggies instead of fresh vegetables for this recipe?

Yes! Just pop them into the air fryer basket without any seasoning on them to get the moisture out. Halfway through, pull them out, toss them with the seasoning and oil, and place them back into the basket to cook for the remaining time. 

HOW CAN I AVOID SOFT VEGETABLES?

Make sure you only put the recommended amount of oil on the veggies so they don’t get soggy. Too much liquid and these go from firm and delicious to mushy. Also, if they don’t seem cooked after the timer goes off, feel free to keep them in the air fryer a little longer to crisp them up.
