Bone Marrow French Onion Soup

A carnivorous French Onion soup? Hot roasted bone marrow spooned on top of melted cheese, all over a bowl of slow-simmered onions.

Ingredients

- Onions - Unsalted butter - Water - Red wine - Chicken broth - Beef broth - Bay leaf - Thyme - Beef marrow bones roasted - Raclette - Hearty bread

Instructions

Heat dutch oven on low and melt butter. Remove from heat and stir in onions and 1 tsp salt.

Transfer Dutch Oven to lower center rack in oven Remove from oven and stir. Return to oven for 90 minutes with lid slightly ajar.

Remove from oven and transfer to stovetop. Cook onions and a crust forms on the bottom of the pan stirring frequently.

Stir in water, ¼ cup at a time scraping free crust, until it evaporates and crust reforms on pan. Stir in wine and cook until evaporated

Stir in chicken and beef broth, water, thyme, bay leaf and ½ tsp salt and bring to a simmer. Set oven to 425 and roast marrow bones , seasoned with salt and thyme.

Toast your slices of bread in the oven Remove marrow from oven and let cool.

Switch oven to broil and with the top of the bowls, broil until cheese is melted. Serve with bone marrow on the side.
