You are going to have to make a second batch of these apple butter BBQ wings. That is the only warning you get. Somebody is going to chow down on at least four while swearing they are saving room for something else (they’re not), and the question is always the same; What is in that sauce?! Apple butter is the secret ingredient that no one is going to guess.

Forget hte 165°F chicken rule, we run wings closer to 190°F in the Girl Carnivore Meat Labs, way past the safe line, because that is where the skin crackles and the meat lets go of the bone. If you want the best texture and bite, trust us, wings can handle the heat.

Ingredients for apple butter BBQ wings: raw wings, apple butter, ketchup, brown sugar, cider vinegar, Worcestershire, paprika, baking powder and butter.

🔪 Ingredients for Apple Butter BBQ Wings

Buy your wings already split into drums and flats if you can. Most stores sell them as party wings.

For the wings

  • Chicken wings: Drums and flats, separated. Whole wings work, you just have to break them down yourself.
  • Aluminum free baking powder: Raises the pH of the skin so it browns and crisps instead of steaming. Not baking soda.
  • Kosher salt, garlic powder, onion powder, paprika, and black pepper

For the apple butter BBQ sauce

  • Apple butter: Unsweetened or lightly sweetened. If yours is heavily spiced, pull the brown sugar back a little.
  • Ketchup: The backbone that turns apple butter into barbecue sauce.
  • Brown sugar
  • Apple cider vinegar: Cuts the sweetness so the sauce does not read like dessert.
  • Worcestershire sauce
  • Paprika, onion powder, garlic powder, salt, and black pepper
  • Cayenne pepper: Optional. Leave it out for a crowd with kids in it.
  • Butter: this goes in off the heat, and it is what makes the sauce glossy instead of flat.

Equipment

  • Wire rack set in a rimmed baking sheet: Air has to reach the underside or the bottom of every wing steams in its own fat.
  • Thermapen: You are chasing 185°F to 190°F here, not 165°F, so this is not the recipe to eyeball.
  • Small saucepan, large mixing bowl, and tongs

📝 How to Make Apple Butter BBQ Wings

  1. Line a rimmed baking sheet with foil and set a wire rack on top. Pat the wings dry with paper towels until the skin feels tacky rather than slick.
  2. Stir the baking powder, salt, garlic powder, onion powder, paprika, and black pepper together in a small bowl, then toss the wings until every piece looks evenly dusted with no damp patches left.
  3. Arrange the wings on the rack in a single layer with space between each one. Refrigerate uncovered for at least 1 hour and up to 8 hours, until the skin looks dry and matte instead of glossy.
  4. Heat the oven to 400°F.
  5. Bake the chilled wings for 20 to 25 minutes, until the tops are pale gold and rendered fat has started to pool on the foil below.
  6. Flip each wing and bake another 20 to 25 minutes, until the skin is deep golden and crisp at the edges. Take them to 185°F to 190°F in the thickest part of a drum. 165°F is the safe floor, not the target, and the last 20 degrees are where the collagen turns to gelatin.
  7. While the wings bake, make the sauce. Add the apple butter, ketchup, brown sugar, apple cider vinegar, Worcestershire, paprika, onion powder, garlic powder, cayenne, salt, and pepper to a small saucepan over medium low heat.
  8. Cook, stirring often, for 3 to 5 minutes, until the sauce bubbles gently at the edges and coats the back of a spoon in a thin even sheet.
  9. Pull the pan off the heat and stir in the butter until it disappears completely and the sauce turns glossy.
  10. Reserve about ⅓ cup of the sauce in a separate bowl for serving.
  11. Transfer the hot wings to a large mixing bowl. Add just enough of the remaining warm sauce to coat and toss with tongs until every piece is lacquered and no sauce is pooling in the bottom of the bowl.
  12. Return the wings to the rack in a single layer and set the oven to broil. Broil for 1 to 3 minutes without walking away, until the glaze bubbles, tightens, and darkens in spots.
  13. Rest the wings 2 to 3 minutes, until the glaze stops running and goes tacky to the touch. Serve with the reserved sauce for dipping.

🔄 Substitutions

  • Smoked paprika for regular paprika in the sauce: Same quantity. You get a campfire edge that reads like the wings came off a pit instead of a sheet pan.
  • Apple sauce plus a pinch of cinnamon for apple butter: Works in a pinch, but apple sauce is thinner and wetter. Simmer it longer, until it coats the back of a spoon the same way.
  • Maple syrup for the brown sugar: Use the same volume. The sauce goes a little looser and a lot more autumn.
  • Bone-in chicken thighs for wings: Same seasoning, same chill, same glaze. They take longer than wings, so go by the thermometer and still pull them at 185°F to 190°F.
  • More or less cayenne: Double it for genuine heat, or leave it out entirely and the sauce stays sweet and smoky.

💡 Meat Nerd Tips

  • 165°F is the floor, not the finish line. Wings are full of connective tissue, and that tissue needs time in the 180°F to 190°F range to melt into gelatin. Pull at 165°F, and the meat is safe but stringy. Take it to 190°F, and it releases from the bone in a single bite.
  • The uncovered chill is the entire crispy skin plan. Cover the tray and you trap the moisture you are trying to drive off. If the wings still look wet in the package when you open them, give them the full 8 hours.
  • Sauce late, broil short, stand there. Apple butter and brown sugar both scorch, and the window between a bubbling glaze and a bitter one is about 45 seconds under a broiler.
  • Crowding the rack costs you the skin. Wings touching each other trap steam between them, and those contact points come out pale and soft no matter how long you bake. Use two sheets before you use one crowded one.
  • The same temperature rule holds on a pit. If you would rather run these over smoke, our smoked chicken wings method is the one we use, and the temperature rule here does not change.

🍽️ What to Serve with Apple Butter BBQ Wings

🧊 Leftovers and Storage

  • Fridge: Airtight container, up to 4 days.
  • Freezer: Freeze the baked wings unsauced for up to 2 months. Sauced wings go soft as they thaw.
  • Sauce on its own: Airtight in the fridge for up to 1 week. It is very good on a pork chop the next night.
  • Reheat: Back on a wire rack at 400°F for 8 to 10 minutes, until the skin tightens up again and the wings are hot through. A microwave will give you a hot, wet wing and nothing else.

Make the sauce

  • While the wings bake, make the sauce. Add the apple butter, ketchup, brown sugar, vinegar, Worcestershire, paprika, onion powder, garlic powder, cayenne, salt, and pepper to a small saucepan over medium-low heat.
  • Simmer 3 to 5 minutes, stirring often, until it bubbles gently at the edges and coats the back of a spoon.
  • Finish off the heat. Stir in the butter until it disappears and the sauce turns glossy.
  • Reserve about ⅓ cup of sauce for serving.

Notes

  • The temperature is the recipe. 165F is the USDA safe floor, not the goal. Wings are full of collagen that needs the 180F to 190F range to melt into gelatin. At 165F the meat is safe but stringy; at 190F it releases from the bone clean. Wings carry enough fat that the extra 25 degrees will not dry them out.
  • The uncovered chill is the whole crispy-skin plan. Covering the tray traps the moisture you are driving off. If the wings look wet in the package, give them the full 8 hours.
  • Do not crowd the rack. Wings touching each other steam at the contact points and come out pale there no matter how long you bake. Two baking sheets will beat one crowded one every time.
  • Watch the broiler the entire time. The window between a bubbling glaze and a bitter one is about 45 seconds.
  • Make ahead: the sauce keeps 1 week refrigerated. The wings can be dry-brined and chilled up to 8 hours before baking.
  • Scaling: the seasoning and sauce both double cleanly. Wings do not — use two sheet pans rather than crowding one, and rotate them halfway.
  • Air fryer: same season and chill, single layer, go by temperature to 185F to 190F, then a short blast at the highest setting after saucing to set the glaze.
  • Storage: fridge 4 days airtight. Freeze UNSAUCED up to 2 months. Reheat on a wire rack at 400F for 8 to 10 minutes. Skip the microwave.

Quick Summary

Apple butter BBQ wings are dry brined with baking powder, air chilled uncovered, baked at 400°F, then tossed in a stovetop apple butter barbecue sauce and flashed under the broiler. The part most people get wrong is the temperature: take the wings to 185°F to 190°F, not 165°F, or the meat stays stringy instead of tender. Watch them every second under the broiler, because the sugars in apple butter go from glossy to burnt in under a minute.

❓ Apple Butter BBQ Wings FAQs

Why cook chicken wings past 165°F?

165°F is the USDA safe temperature for chicken, but wings are loaded with collagen that does not break down until you get into the 180°F to 190°F range. That extra time converts the connective tissue to gelatin, which is what makes the meat tender and lets it pull cleanly off the bone. Wings have enough fat that the extra 25 degrees will not dry them out the way it would a chicken breast.

Why add baking powder to chicken wings?

Baking powder raises the pH at the surface of the skin, which speeds up browning and helps moisture evaporate instead of steaming the skin soft. It is not a coating and it will not taste like anything. Use aluminum free baking powder and never swap in baking soda, which is far stronger and leaves a metallic, soapy flavor.

Why refrigerate the seasoned wings uncovered?

The open air of the fridge pulls moisture off the surface of the skin, and dry skin crisps far better once it hits a hot oven. The rest also gives the salt time to season the meat all the way through rather than just sitting on the outside. One hour works, 8 hours is better, and covering the tray defeats the whole purpose.

Can I make apple butter BBQ wings in an air fryer?

Yes, though we tested this version in the oven. Season and air chill the wings exactly the same way, cook them in a single layer so nothing overlaps, and go by temperature rather than the clock. Pull them at 185°F to 190°F, toss them in the warm sauce, and give them a short blast at the highest setting to set the glaze in place of the broiler step.

Can I use store bought barbecue sauce and stir apple butter into it?

You can, and it will taste fine, but it will be sweeter and thinner than the sauce here because bottled sauce already carries its own sugar. Start with roughly equal parts bottled sauce and apple butter, skip the brown sugar entirely, and add apple cider vinegar a splash at a time until it stops reading like dessert.
