Counting heads for Thursday and trying to figure out how big a bird to buy? This one’s for you.
The number on a turkey label looks huge next to what anyone actually eats, so most cooks either panic and buy a monster bird or trust their eyes and run out of white meat before seconds. Below is how much turkey per person to plan for at every table size, the day your bird needs to move into the fridge, and what changes when you buy a breast instead.
🔪 The short answer
Buy 1 pound of whole turkey per person, or 1 1/2 pounds per person if you want leftovers for sandwiches. That is the USDA’s guidance. Eight guests need an 8 to 12 pound bird, and twelve guests need 12 to 18 pounds. A frozen turkey sold already stuffed needs 1 1/4 pounds per person.
⚖️ Why a pound, when nobody eats a pound
A whole turkey’s weight includes everything you won’t slice. The backbone, the rib cage, the neck and the bag of giblets tucked in the cavity all count toward the number on the label. The neck and giblets aren’t waste in our kitchen. They’re the base of our giblet gravy. They just don’t land on a plate as turkey, which is why the per-person number looks so big next to what anyone actually eats.
One exception. If you’re buying a frozen turkey that comes already stuffed, the USDA bumps it to 1 1/4 pounds per person.
📋 How much turkey for your table
| Guests | No leftovers (1 lb each) | With leftovers (1 1/2 lb each) |
|---|---|---|
| 6 | 6 lb | 9 lb |
| 8 | 8 lb | 12 lb |
| 10 | 10 lb | 15 lb |
| 12 | 12 lb | 18 lb |
| 16 | 16 lb | 24 lb |
| 20 | 20 lb | 30 lb |
Feeding a crowd big enough to need more than 24 pounds? Buy two smaller birds. The USDA’s thawing and roasting charts both stop at 24 pounds. Two 15-pound turkeys thaw days sooner than one giant bird, and you get four drumsticks instead of two. Smoke one and roast the other if oven space is tight.

🗓️ When to buy it, and when it goes in the fridge
A fresh turkey should be bought only one to two days before you cook it. A frozen bird can wait in the freezer for months, but it needs about a full day in the fridge for every four to five pounds to thaw. Our turkey thawing guide walks through the fridge and cold-water methods. Here are the dates, counting back from Thursday, November 26, using the long end of each USDA range:
| Bird size | Fridge thaw time | In the fridge by |
|---|---|---|
| 4 to 12 lb | 1 to 3 days | Monday, Nov 23 |
| 12 to 16 lb | 3 to 4 days | Sunday, Nov 22 |
| 16 to 20 lb | 4 to 5 days | Saturday, Nov 21 |
| 20 to 24 lb | 5 to 6 days | Friday, Nov 20 |
If you’re dry brining, the salted bird spends up to two more days uncovered in the fridge, so move every date above two days earlier. A 20-pound bird headed for a dry brine goes in the fridge by Thursday, November 19.

🍗 Only feeding breast-meat people?
Skip the whole bird. The serving chart in our turkey breast thawing guide sizes a breast by headcount, and our slow cooker turkey breast keeps your oven free for everything else.

🥩 Meat Nerd Tips
- Read the label before you plan a brine. Plenty of frozen birds are brined at the plant. Butterball’s frozen whole turkey lists up to 8 percent of a salt solution, and a bird like that skips the wet brine.
- Order a farm bird early. A fresh turkey from a farm or a butcher often has to be reserved ahead. Call now, lock in a pickup day one to two days before you cook, and you skip the thaw math entirely.
- Check both ends of the bird. The USDA says to remove the giblets from the cavities after thawing and cook them separately (and we’ve seen people make this mistake, so it’s good to double-check). The neck often sits in one end and the giblet bag in the other.
⚡ Lightning round
Frozen, yes. Fresh, no. A fresh bird gets bought one to two days before you cook it, so a two-weeks-early turkey goes straight into the freezer.
Breast at 165°F and thigh at 175°F when finished. Check both, in the thickest part and off the bone. Our oven turkey guide walks you through it, start to carving.
Quick Summary
Buy 1 pound of whole turkey per person, 1 1/2 pounds if you want leftovers, and 1 1/4 pounds for a frozen bird that comes already stuffed. Count back from Thanksgiving at one day of fridge time for every four to five pounds, and add two more days if you plan to dry brine.
