A lamb shoulder chop is cut from the upper foreleg and shoulder of the animal, further up and further forward than a loin or rib chop. Because the shoulder does more work, it develops more fat, more marbling, and more connective tissue than the cuts most people default to. That’s what gives it flavor, and that’s also what requires a little patience at the pan.
They’re typically blade-cut, which means you’ll see a cross-section of the blade bone running through the center. Bone-in, well-marbled, and priced well below the rack.

- Kosher salt and black pepper: season generously. The crust depends on it.
- Olive oil: high smoke point enough for the initial sear. Avocado oil works too.
- Unsalted butter: the star of the baste. It browns in the pan and carries the garlic and herb flavor directly onto the meat.
- Garlic: fresh cloves, chopped. Jarred garlic won’t give you the same punch.
- Fresh rosemary and thyme: chopped. These bloom in the hot butter and perfume the entire baste. Dried herbs burn too quickly at this heat.
- Lemon wedges: a squeeze of acid right before serving brightens the richness and cuts through the butter.

๐ How to Make Pan-Seared Lamb Shoulder Chops
- Pat the lamb shoulder chops completely dry with paper towels. Moisture on the surface steams instead of searing, and steam means no crust. Season both sides generously with salt and black pepper.
- Heat a cast iron skillet over medium-high until it’s properly hot, about 2-3 minutes. Add the olive oil and let it shimmer. If it smokes immediately, pull it off the heat for 30 seconds and lower the burner slightly.
- Place the chops in the hot skillet and don’t touch them for 4-5 minutes. You’re building the crust here, and moving the chops too early tears it off the surface. You’ll know it’s time to flip when the edges are browned, and the chop releases cleanly from the pan.

- Thyme only or rosemary only is fine if you don’t have both. Skip dried herbs entirely for this recipe.
- Ghee instead of butter for a dairy-free option. You lose a bit of the milk solid browning, but the baste still works.
- No cast iron? A heavy stainless steel skillet holds heat well enough. Nonstick won’t give you the crust. But, we swear by cast iron for a good sear and have been using this pan for over 15 years.

- Dry the surface aggressively. If you skip this step, the chops will steam, and you’ll get a grey exterior instead of a golden crust. Press both sides with paper towels.

- Shoulder chops vary in thickness. The blade bone means the meat is uneven. Use an instant-read thermometer in the thickest section, not near the bone, for an accurate read.
