This is one of those dishes that smells so incredibly good when it comes out of the oven. Saffron, cardamom, onion, and spiced chicken aromas all hit at once – it’s so cozy and different from anything else we make at home.

We’ve been working our way through classic Indian dishes, like tikka masala, in the Girl Carnivore Meat Labs and we figured out the onions are where this recipe lives or dies. You need them to be truly dark, deep mahogany. It kind of feels like you’ve gone too far before the chicken ever goes in. We rushed them to golden brown twice because we were impatient, and both times the biryani came out technically ok… but completely flat. Dark onions mellow under the foil and become the backbone that makes the rice taste like real biryani rather than just spiced rice.

๐Ÿ”ช Ingredients for Chicken Biryani

Chicken and Marinade

  • Bone-in chicken thighs: The bone keeps the meat moist through the oven braise and contributes to the liquid beneath the rice. Skin-on or skinless both work here.
  • Plain yogurt: Full-fat. It tenderizes the chicken and carries the spice coating evenly. Greek yogurt works if you thin it with a splash of water first.
  • Ginger-garlic paste: The flavor foundation. Equal parts fresh ginger and garlic blended smooth, or store-bought. Either is fine.
  • Garam masala: Use a warm, fragrant blend. If it smells flat or dusty out of the jar, replace it before building this marinade on top of it.
  • Chili powder: Kashmiri chili powder gives a deep red color with mild heat. Standard chili powder runs hotter. Choose based on your heat preference.
  • Turmeric and ground cumin: Background depth and color. Both go in the marinade.
  • Fresh lemon juice: Cuts the richness of the yogurt and brightens the whole marinade.

Rice

  • Basmati rice: Long-grain only. The grain length is structural here. Short- or medium-grain rice will turn to mush during the oven steam. Aged basmati gives the most distinct, separate grains.
  • Whole spices for the parboil: Bay leaf, star anise, green cardamom pods, cloves, and a cinnamon stick. These go into the boiling water to perfume the rice before it ever meets the chicken. Don’t skip them.

Onions and Layering

  • Large onion, thinly sliced: Half caramelizes with the chicken; the other half is reserved for the top layer. Thin slices caramelize evenly without burning on the edges first.
  • Fresh cilantro and mint: Both, and fresh only. The cilantro deepens the savory character; the mint lifts it. Dried herbs won’t do anything useful here.
  • Ghee: Drizzled over the top layer before sealing. Adds richness and helps keep the top rice from drying out during baking.

Saffron Milk (optional)

  • Saffron steeped in warm milk: Blooms in 5-10 minutes and gives the top layer that golden tint and faint floral note. Optional, but it’s what makes biryani look like biryani.

Equipment

  • Oven-safe cast iron or Dutch oven: You need something that goes from stovetop to oven without transferring the chicken. A 12-inch cast-iron skillet or a 5-6-quart Dutch oven both work.
  • Heavy-duty foil: Even with a tight lid, wrapping in foil first traps steam significantly better. Both together is the right call.
  • Instant-read thermometer: Bone-in chicken thighs are done at 175-185ยฐF. Pull them at 165ยฐF, and you’ll have technically safe but underdone dark meat.

๐Ÿ“ How to Make Chicken Biryani

  1. Combine yogurt, ginger-garlic paste, salt, garam masala, chili powder, turmeric, cumin, and lemon juice in a large bowl. Add chicken thighs and coat completely. Cover and refrigerate for at least 1 hour, up to 8 hours.
  2. Preheat oven to 350ยฐF. Heat oil in a large oven-safe cast iron or Dutch oven over medium-high. Add sliced onions and cook 12-18 minutes, stirring often, until deep golden brown and reduced by about two-thirds. Remove half the onions and set aside for topping.
  3. Add the marinated chicken to the pot with the remaining onions. Cook 5-7 minutes, turning once, until the chicken starts browning on the bottom and the masala thickens and coats the base of the pot. Turn off the heat.
  4. Rinse basmati rice 3-4 times in cold water until the water runs mostly clear. Bring 6 cups of salted water to a boil with the whole spices. Add rice and boil for 5-6 minutes. Taste a grain at 5 minutes โ€” the outside should be tender, the center still firm and chalky. That’s 70% cooked. Drain immediately.
  5. If using saffron, steep a pinch in 1 tablespoon of warm milk for 5 minutes until the milk turns golden.
  6. Spread the parboiled rice evenly over the chicken. Top with reserved fried onions, cilantro, and mint. Drizzle ghee and saffron milk across the surface.
  7. Cover tightly with foil, then the lid. Bake at 350ยฐF for 40-50 minutes until chicken reaches 175-185ยฐF and the top layer of rice is fully tender and dry to the touch.
  8. Rest the pan covered for 10 minutes. Then gently fluff from the sides, lifting without completely breaking the layers. Serve your chicken biryani immediately with raita and lemon wedges.

๐Ÿ”„ Substitutions

  • Bone-in chicken thighs to boneless skinless thighs: Works. Reduce bake time to 30-35 minutes and pull at 165ยฐF. Loses some flavor from the bone, but holds up better than breast.
  • Bone-in chicken thighs to chicken breast: Possible, but the breast dries out quickly in a long braise. Pull at 165ยฐF and lean to the short end of bake time. Thighs are the best option for this method.
  • Ghee to butter: Works. Butter has more water than ghee, so it won’t drizzle as cleanly, but the flavor difference is minor.
  • Fresh cilantro and mint to dried: Don’t. Dried herbs won’t work for layering. If you can’t get fresh mint, leave it out entirely.
  • Ginger-garlic paste to fresh: Same thing. Equal parts grated ginger and minced garlic, blended or finely worked together. The jarred version is just pre-made convenience.
  • Saffron to turmeric milk: Gives the golden color without the floral note. Looks right, doesn’t taste the same, but it’s not nothing.
  • Plain yogurt to full-fat Greek yogurt: Thin with a splash of water first. Full-fat Greek yogurt is too thick to coat the chicken evenly without diluting it.

๐Ÿ’ก Meat Nerd Tips

  • The 70% cooked rule is the hardest gauge. Taste a grain at the 5-minute mark. Outside tender, center chalky and firm. That’s it. Fully cooked before the oven means the rice will be mush by the time the chicken is done. Underdone means hard rice in the finished dish. Taste and trust the process.
  • The onions need to be dark. Not golden. Deep mahogany, reduced by two-thirds, the point where you think you’ve gone too far. That bitterness cooks out completely under the foil.
  • Don’t lift the foil mid-bake. The steam inside is cooking the rice. Every time you check, you lose steam, and the top layer dries out before the chicken hits temp.
  • The 10-minute covered rest is part of the cooking time. The rice firms up during the carryover cooking, and the layers hold when you fluff. Pull it early, and everything slides.

  • Biryani needs raita. The cool yogurt against the warm spiced rice is part of the dish.

Ingredients  

Chicken and Marinade

  • 1.5 lb bone-in chicken thighs
  • ยฝ cup plain yogurt
  • 1 tablespoon ginger-garlic paste or ยฝ tbsp grated ginger + 1 tbsp minced garlic

  • 1 teaspoon chili powder or kashmiri chili powder

  • 1 tablespoon fresh lemon juice

Rice

  • 1ยฝ cups basmati rice
  • 6 cups water for boiling
  • ยฝ tablespoon salt
  • 1 bay leaf
  • 2 star anise
  • 4 green cardamom pods
  • 4 cloves
  • 1 small cinnamon stick

Onions and Layering

  • 2 tablespoons oil
  • 1 large onion thinly sliced
  • ยผ cup fresh cilantro chopped
  • 2 tablespoons fresh mint chopped
  • 2 tablespoons ghee

Instructions 

Marinate the Chicken

  • Combine yogurt, ginger-garlic paste, salt, garam masala, chili powder, turmeric, cumin, and lemon juice. Add chicken thighs and coat completely. Refrigerate at least 1 hour, up to 8 hours.

Caramelize the Onions

  • Preheat oven to 350ยฐF. Heat oil over medium-high in a large oven-safe cast iron or Dutch oven. Cook sliced onions 12-18 minutes, stirring often, until deep mahogany brown. Remove half for topping.

Brown the Chicken

  • Add the marinated chicken to the skillet with the remaining onions. Cook for 5-7 minutes, turning once, until the chicken starts to brown and the masala thickens. Turn off the heat.

Parboil the Rice

  • Rinse rice 3-4 times until water runs mostly clear. Boil 6 cups salted water with whole spices. Add rice and boil 5-6 minutes until 70% cooked (tender outside, firm chalky center). Drain immediately.

Bloom the Saffron (optional)

  • Steep saffron in 1 tablespoon warm milk for 5 minutes until golden.

Layer

  • Spread parboiled rice over the chicken. Top with reserved fried onions, cilantro, and mint. Drizzle ghee and saffron milk over the top.

Bake

  • Cover tightly with foil, then the lid. Bake at 350ยฐF for 40-50 minutes until chicken reaches 175-185ยฐF and rice is fully tender.

Rest and Serve

  • Rest, covered, for 10 minutes. The fluff gently from the sides with a fork. Serve with raita and lemon wedges.
