This is a quick, easy bowl recipe where you pile our chipotle chicken over rice with all of your favorite toppings. It’s simple, fast, and you can go full-on Chipotle bowl toppings bar or just call it a day with something as simple as how we’re showing it.

🔪 Ingredients for Chipotle Chicken Bowls

  • Boneless, skinless chicken breast: cut into 1-inch cubes before it goes into the marinade. At this size breast holds its shape, cooks through in under ten minutes, and its lean profile leaves room for the creamy toppings to carry the richness instead.
  • Cooked rice
  • Black beans, Sweet corn, Cherry tomatoes and avocado for toppings.
  • Fresh cilantro and lime wedges
  • Optional Toppings: Pickled red onion, shredded romaine, cotija or a shredded Mexican blend, chipotle crema, or a lime vinaigrette.

📝 How to Make Chipotle Chicken Bowls

  1. Sear the chicken. Heat a large skillet over medium-high with a light drizzle of oil. Add the marinated cubes in a single layer and let them sit undisturbed for 2 minutes before tossing. Cook 8 to 10 minutes total, until the edges are deeply caramelized and the internal temperature reads 165°F.
  2. Warm the rice. Divide the warm cooked rice evenly among your bowls while the chicken finishes.
  3. Build the bowl. Arrange the black beans, corn, tomatoes, and avocado in distinct sections around the rice instead of tossing everything together. This is what keeps the bowl from turning to mush by day three.
  4. Finish and garnish. Spoon the hot chicken into the center, garnish with cilantro and a lime wedge, and serve your dressing of choice on the side.

No stovetop? Air fryer: cook the cubes at 400°F for 8 to 10 minutes, shaking the basket halfway through. Oven: spread the cubes on a foil-lined sheet and bake at 400°F for 12 to 15 minutes, finishing under the broiler for the last minute if you want more color.

🔄 Substitutions

  • Cauliflower rice or steamed quinoa for rice: swap 1:1. Cauliflower rice keeps the carb count down, quinoa adds more protein to the bowl.
  • Chopped romaine for rice: turns the whole thing into a chipotle chicken salad bowl. Same protein and toppings, served cold instead of warm.
  • Chicken thighs for chicken breast: works fine at the same cube size. Thighs carry a little more fat, so expect a richer bite before you even add the crema.

💡 Meat Nerd Tips

  • Cut the cubes uniformly. Uneven pieces mean the small ones dry out before the large ones finish cooking.
  • Don’t crowd the pan. Too much chicken in a pan that’s too small drops the temperature, and the chicken boils in its own marinade instead of searing, so you lose the caramelized edges the whole bowl is built around.
  • Dress it right before eating. Crema or vinaigrette added too early gets absorbed by the rice, and the bowl turns to mush by the time you eat it.
  • Use ripe avocado only. This is a texture dish, and a hard avocado undercuts the whole point of a compartmentalized bowl.

  • Freezer: cooked chicken cubes freeze in an airtight bag for up to 2 months. Thaw overnight in the fridge before reheating.
  • Reheat: only the rice and chicken, in a skillet or the microwave until steaming hot all the way through, then add the cold toppings.
