You know the platter that disappears first at every cookout? Tonight, you’re the one bringing it. Chipotle chicken kabobs, skewered and thrown on the grill hot, come off dark, sticky, and gone before the sides even hit the table.

The move: make the chipotle chicken marinade, cube chicken thighs, thread the skewers, and let the grill do the rest. The trick to getting charred chicken on all sides (despite how we love to stack a skewer with as much as we can) is giving a little breathing room between the pieces. That way, each piece gets good char and cooks evenly.

  • Boneless, skinless chicken thighs: Cut into uniform 1.5-inch cubes so every piece finishes cooking at the same time.
  • Chipotle chicken marinade: Half a batch coats about 1.5 lbs of chicken. Full marinade recipe here.
  • Red onion: Cut into chunks close to the size of your chicken cubes so everything cooks at the same rate.
  • Bell peppers, one red and one green or yellow
  • Olive oil
  • Kosher salt and black pepper

Equipment

Wood or metal skewers both work. If you’re using wood, soak them in water for at least 30 minutes before threading, or they’ll scorch and split on the grill before the chicken is done.

📝 How to Make Chipotle Chicken Kabobs

Same principle as our grilled pollo asado: a marinade this citrus-heavy only pays off with aggressive, direct heat. Don’t undersell it with a lukewarm grill or a low oven.

  1. Marinate the chicken. Toss the cubed thighs with the chipotle chicken marinade in a bowl or zip-top bag. Refrigerate 2 to 4 hours. Keep the vegetables in a separate bowl; the acid in the marinade dulls their color if they sit in it too.
  2. Season the vegetables. Right before you’re ready to skewer, toss the onion and bell peppers with olive oil, kosher salt, and black pepper.
  3. Thread the skewers. Alternate chicken and vegetables, leaving a sliver of space, about the width of a pencil, between each piece, the same spacing trick we use for our garlic parmesan chicken skewers. Packed tight, the chicken steams instead of charring.
  4. Grill the skewers (preferred method). Preheat the grill to medium-high, about 400°F, and lightly oil the grates. Cook 10 to 12 minutes, giving the skewers a quarter turn every 2 to 3 minutes, until the chicken hits 165°F and the edges are dark and sticky.
  5. Or bake them. Preheat the oven to 425°F. Set the skewers on a wire rack over a baking sheet so air moves underneath, and bake 15 to 18 minutes, until the chicken reads 165°F. Switch to the broiler for the final 2 minutes to get the char you’d get off the grill.
  6. Or air fry them. Arrange the skewers in a single layer in the basket and cook at 400°F for 10 to 12 minutes, flipping halfway through, until the chicken reads 165°F.

🔄 Substitutions

  • Metal skewers for wood: works with zero downside. Skip the 30-minute soak, and metal conducts a little extra heat into the center of the chicken, which can shave a minute or two off the cook.
  • Boneless, skinless chicken breast for thighs: works, but cut the grill time to 8 to 10 minutes and watch it closely. Breast has almost no fat to buffer it against direct heat, so it dries out faster than thighs do.
  • White or yellow onion for red onion: works, milder flavor, same texture once it chars.

💡 Meat Nerd Tips

  • Cut every cube the same size. About 1.5 inches, using a ruler the first time if you have to. Inconsistent sizing means the small pieces burn black before the big ones finish cooking through.
  • Leave space between the pieces on the skewer. Crowding them together traps steam, and steamed chicken never chars no matter how hot your grill runs.
  • Push the heat, don’t back off it. Low heat slowly bakes the chicken dry without ever getting hot enough to caramelize the honey in the marinade. You want an aggressive, fast sear, not a slow cook.
  • Keep the vegetables out of the marinade. The acid that tenderizes the chicken will also turn bright red and green peppers dull and muddy if they sit in it. Season them separately, right before they hit the skewer.

🍽️ What to Serve with Chipotle Chicken Kabobs

  • Warm flour tortillas: pull the chicken and vegetables off the skewer right at the table and build soft tacos while everything’s still hot.
  • Mexican street corn salad: the charred sweetness plays off the smoky heat in the marinade the same way grilled corn on the cob does, minus the mess of gnawing it off the cob.
  • Cilantro-lime rice: catches every bit of marinade that drips off once you pull the skewers.
  • A cold michelada: the beer and lime cut through the char and heat between bites.

🧊 Leftovers and Storage

  • Refrigerate in an airtight container for up to 4 days. Pull the chicken and vegetables off the skewers first; they store flatter and reheat more evenly that way.
  • Reheat in a skillet over medium heat with a small splash of water or oil to bring back some of the charred exterior. The microwave turns the chicken rubbery.
