Instant Pot Carnita Bowls

This is one of those crazy easy Instant Pot dinners loaded with pulled pork piled over greens and toppings served in a fun crunchy tostada bowl.

I loved that I popped this roast in the Instant Pot and it was ready 40 minutes later to be shredded. While it cooked, I prepped all the toppings and set the table.

INGREDIENTS

– Pork Roast – Chicken broth  – Quick pickled red cabbage – Red Onion  – Diced Mangoes – Tomatoes or Salsa – Avocado – Scallions – Black Beans – Slices of Limes – Crema

Place the pork roast in the insta pot and fill with water or chicken broth. Cook for 40 minutes. Remove the pork from the broth. Wrap in foil and let rest 5 minutes before shredding.

Meanwhile, make the tostada bowl. Lightly oil 4 tortillas and place them in between the divots on an upside down cupcake baking tin.

Bake the tortillas for 5 to 7 minutes, until crisp and hold their shape. Quickly sprinkle with a pinch of salt.

Fill each bowl with chopped greens and a hefty portion of the shredded carnitas. Top each with desired toppings and serve hot.

Serve this with rice, plantains, homemade guacamole, or refried beans to make a full platter out of it.
