Corn tortillas dipped in beef consomé and crisped in cast iron with a two-cheese melt and juicy slow-cooker shredded beef. The frico edges are the bonus you didn't expect.
Mix the grated Oaxaca and cheddar together in a bowl. Have the warm shredded beef, cheese blend, tortillas, and consomé or red oil within arm's reach before you start.
Heat the Skillet
Set a large cast iron skillet over medium heat. Add enough vegetable oil to coat the surface. Heat until shimmering, about 2 minutes.
Dip the Tortilla
Submerge a corn tortilla in the consomé or red chili oil. Coat fully, then shake off the excess. Saturated but not dripping.
Build the Taco
Lay the dipped tortilla flat on the skillet. Spread cheese over the entire surface. Add a scoop of warm shredded beef to one half. Top with a pinch of white onion and cilantro.
Fold and Press
Once the cheese bubbles at the edges (60–90 seconds), fold the tortilla into a half-moon. Press firmly with a spatula.
Crisp Both Sides
Cook 2–3 minutes per side until the shell is rigid and holds its shape when lifted. Dark char marks on both sides. Let cheese spill onto the skillet to form crispy frico edges.
Transfer and Repeat
Move to a wire rack. Repeat with remaining tortillas. Serve immediately — 10-minute peak window.
Notes
If your tortillas are cracking, wrap them in a damp paper towel and microwave them for 30 seconds.
Reheat in a dry skillet or air fryer at 375°F for 3-4 min. Never microwave.
Freeze the beef separately for up to 3 months. Don't freeze assembled tacos.
