Slow cooker Mexican shredded beef rolled in flour tortillas, blanketed in red enchilada sauce, and buried under cheddar and Monterey Jack. Better than takeout and ready in 35 minutes.
Preheat oven to 375°F. Spray a 9x13-inch baking dish with nonstick spray. If tortillas feel stiff, wrap the stack in damp paper towels and microwave 20 seconds.
Fill and Roll
Working one at a time, lay a tortilla flat. Add 1/4 cup shredded beef, 1 tablespoon diced onion, and a generous pinch of the mixed cheese down the center.
Roll tightly and place seam-side down in the baking dish. Repeat with remaining tortillas, packing them snugly.
Smother
Pour enchilada sauce over the rolled tortillas, making sure the tips and edges are covered. Don't flood — a generous coat is the goal.
Top with Cheese
Sprinkle remaining cheddar and Monterey Jack liberally over the surface, focusing on the center.
Bake
Bake uncovered for 20 minutes, until the sauce is bubbling around the edges and the cheese is melted and lightly browned in spots.
Rest and Serve
Rest 5 to 10 minutes before serving — this step is non-negotiable with flour tortillas. Garnish with fresh cilantro and sour cream. Serve with diced tomatoes or avocado.
Notes
Don't use burrito-size tortillas - too much dough per bite.
Grate your own cheese. Pre-shredded won't melt smoothly.
Make-ahead: assemble and refrigerate up to 24 hours; add cheese just before baking. But let your tray sit at room temperature for 20-30 minutes before placing it in the oven to prevent it from breaking.
Freeze unbaked up to 3 months. Bake from frozen: covered 40 min, uncovered 10 min.
