Ingredients
For the Dumplings
1cupcabbagefinely shredded
1poundground chicken(85/15)
3stalksgreen onion, diced
2teaspoonsgarlic paste
1teaspoonginger paste
2tablespoonssoy sauce
1tablespoonoyster sauce
2teaspoonscornstarch
1teaspoontoasted sesame oil
½teaspoonground white pepper
24dumpling wrappersround or square, both work
1tablespoonavocado oilor other neutral oil
⅓cupwater
For Finishing
green onionthinly sliced
sesame seeds
chili crisp
Instructions
Prep the Station
Line a baking sheet with parchment. Keep dumpling wrappers under a barely damp towel so they stay flexible.
Mix the Filling
Combine chicken, cabbage, green onion, garlic paste, ginger paste, soy sauce, oyster sauce, cornstarch, sesame oil, and white pepper. Mix firmly until sticky and the mixture holds its shape.
Portion and Wrap
Scoop into 1½-tablespoon mounds with a flat bottom.
Press one wrapper over each mound, edges left loose but gently pressed to drape over the filling.
Sear
Heat avocado oil in the skillet over medium. Place dumplings flat-side down in a single layer, in batches as needed. Sear 1 minute until set and lightly browned.
Steam
Pour water around the pan's edge (not over the wrappers). Cover, drop heat to medium-low, and steam 6-8 minutes until wrappers are tender and translucent and chicken reaches 165°F.
Crisp & Finish
Uncover, raise the heat to medium, and cook 2-4 minutes until water evaporates and bottoms crisp again. Top with green onion, sesame seeds, and chili crisp.
Notes
Refrigerate leftovers up to 3 days; reheat in a skillet with a splash of water, covered, then uncover to crisp the bottoms back up.
Or microwave under a damp paper towel in short intervals when speed matters more than a crisp bottom.
Ground pork can replace ground chicken with no other changes.
