Grilled asparagus in foil is a simple yet impressive side dish that brings out the natural flavors of asparagus. Prep your grill for two-zone heat, around 400 degrees F. If using a traditional grill, allow the grill to preheat with the lid on for 5 to 10 minutes to come to temperature before grilling.
Prep the asparagus spears
Meanwhile, cut the bottoms from the asparagus, about ½ inch from the bottom.
Line 2 sheets of aluminum foil on a clean work surface.
Lay the asparagus spears in the center of the foil and drizzle with the olive oil.
Season with the spice blend, salt and pepper.
Toss the asparagus to coat.
Fold the foil up over te asparagus to create a packet.
Lay out another sheet of foil and place the packet seam-side down in the center.
Wrap in an additional layer of foil to prevent leaks.
Grill the asparagus
Place the foil packet seam side up over the cooler side of the grill.
Cook 4 minutes.
Flip and cook 2 to 4 minutes longer, depending on your personal preference.
Using a spatula, remove the foil packet from the grill.
Serve
Carefully open the foil packet immediately, using caution as the steam is hot.
Sprinkle the fresh lemon zest over the grilled asparagus and serve hot with your favorite main dishes.
Notes
Don't cook too long! Caution, cooking the asparagus in a packet essentially steams it - and like all steamed veggies, too long can cause it to be mushy. We prefer our asparagus with a bit of a snap when biting into it. We love this with crumbled bacon bits, pancetta, or prosciutto for a salty umami addition.
