Remove from over and let cool 10 minutes before opening foil packet.
When garlic has cooled enough to touch, squeeze the cloves from the head.
Mash.
Make the wing sauce
Whisk the mashed roasted garlic with the butter and mayo in a small bowl. Or the bowl of your food processor.
Add in the vinegar, lemon juice, black pepper, salt, Over Easy, parmesan, and chives.
Cover and chill for 2 hours or up to 3 days until ready to serve.
Air fry wings
Pat dry
Rub with oil and season lightly with salt.
Air fry at 380 - 400 degrees F until crispy, flipping once halfway through and internal temperature reaches 165. About 20 minutes.
Remove from air fryer and immediately toss in buffalo sauce.
Return to the air fryer and cook 5 to 10 minutes longer, until the skin gets brown and extra crispy.
Remove from the air fryer and allow to rest 5 minutes.
Serve
Serve hot with sauce on the side OR toss wings in the sauce to coat them.
Garnish with freshly minced parsley and a generous sprinkle of Parmesan cheese.

We have tested this recipe in several air fryers and found that cook time varies for crispy skin. Start with 20 minutes, and increase as needed. Be sure to flip your wings and rotate them so they are all getting evenly cooked. To keep it Keto, we use avocado mayo and Primal Kitchens buffalo sauce.
