Weeknight Skillet Chicken Parmesan Pasta

 Skillet Chicken Parmesan, bastardizing a classic Italian dish and making mouths water in anticipation.

This weeknight quickie for the working man is perfect for just such an occasion.


- Chicken breast - Olive oil - Pasta sauce - Dried oregano - Red pepper flakes - Chicken broth - Pasta  - Parmesan cheese - mozzarella cheese


Pound chicken to ½″ thick between two pieces of plastic wrap.

Cut into 1″ cube and season with salt and pepper.

Heat the olive oil in a large skillet over medium heat to coat the pan.

Add the chicken and cook, 5 to 7 minutes, until cooked through, turning as needed to cook evenly on all sides.

Add the pasta sauce, oregano and red pepper flakes.
