Smoked Chicken Chilaquiles

1 cup Leftover Smoked Chicken 5 to 6 Tortillas 1 ½ cup Enchilada Sauce 3 to 4 Eggs ½ cup Cheese ½ Red Onion ½ Red Pepper Handful Cilantro


Preheat the oven to 350 degrees F. Reheat the chicken in a skillet with enchilada sauce.

1. Heat the Chicken!

Rip tortillas into wedges and dip them in enchilada sauce. Add to the chicken.

2. Add Tortillas!

Add remaining enchilada sauce. Season with salt and pepper.

3. Season!

Make little nooks in the mixture and gently crack an egg into each one. Bake the eggs.

4. Add the Eggs!

Top with cheese. Place skillet back in oven until cheese is melted.

5. Top with cheese!

Serve chicken chilaquiles topped with peppers, onions, and cilantro!
