Smoked Bacon Wrapped BBQ Fatty

1 lb Thick Cut Bacon 1 lb Pork Sausage 1 tbsp BBQ Sauce 1 tbsp BBQ Seasoning Blend 1 c Homemade Creamy Mac and Cheese


Divide bacon in half. Arrange strips on a surface and place more on top going the opposite way. Fold back every other strip and weave.

1. Make a Bacon Weave!

In a large bowl, add ground pork sausage, BBQ sauce, and seasoning. Mix to combine.

2. Make Pork Filling

Press the ground sausage mixture into the bacon weave.

3. Add to the Bacon!

Spoon the mac and cheese into the center.

4. Add the Mac and Cheese!

Carefully roll up the BBQ fatty, making sure the bacon weave rolls with it. Sprinkle with seasoning over top.

5. Roll and Season!

Preheat the smoker to 225 degrees F. Lay it seam side down on the cool side of the smoker. Cover and smoke until the bacon is crispy and the internal temp of the pork is 165 degrees F.

6. Smoke It!

Allow it to cool about 5 minutes before cutting into it. Serve with extra BBQ sauce for dipping.

7. Allow to Cool Slightly!

You can use a variety of stuffings: grandma's meatloaf recipe, spicy or sweet sausage, breakfast sausage... the possibilities are endless!
