4 lbs corned beef 4 tbs fresh coarsely ground black pepper 2 tbs coriander powder 1 tspn mustard powder 1 tbs light brown sugar 1 tbs smoked paprika 2 tspn garlic powder 2 tspn onion powder
Ingredients
Soak the corned beef to desalinate the meat ahead of time to make it less salty.
It ain't pretty, but it's a super important step....
Combine the black pepper, coriander, mustard, brown sugar, paprika, garlic powder, and onion powder in a bowl
2. Make the rub
Rub the corned beef with a thick layer of rub
3. Coat the beef
Smoke the meat until it reaches 190 degrees F internally
4. Smoke the Meat
Wrap in foil and allow to cool overnight in a temperature-controlled cooler or fridge
5. Cool completely
Steam until the slices are tender and heated through. This only takes a few minutes if you are doing a small portion or the whole pastrami can take a few hours
6. Steam the Pastrami!
Allow it to cool about 5 minutes before cutting into it. Slice into thin layers for the best bite.
7. Slice and Serve
