Bacon Wrapped Smoked Meatloaf

2 lbs beef 1 tbsp olive oil 1 onion 3 cloves garlic 1 tsp paprika  ½ tsp chili powder ¼ tsp red pepper flakes 2 eggs ¾ cup bread crumbs 1 tbsp fresh parsley ½ lbs thick-cut bacon

Ingredients

Preheat the smoker to 225-250 degrees F with neutral flavored chips.

1. Prepare the Smoker!

In a skillet, sauté olive oil, onion, and garlic. Add in dry seasonings.

2. Sauté the seasonings!

In a large mixing bowl, combine eggs, breadcrumbs, parsley, beef bacon mixture, and cooked onions.

3. Combine!

Form into a loaf and gently layer with strips of bacon.

4. Form and Add Bacon!

Smoke meatloaf over indirect heat until the bacon is crispy and the internal temp is 160 F.

5. Smoke!

Remove meatloaf and allow to rest 10 minutes before slicing and serving!
